Asparagus Cheese Tart

It’s Spring (at least in Australia!), and that means it’s asparagus season.  One of the most versatile, easy to cook and nutritious vegetables, asparagus is one of my fridge staples, especially when it’s in season. We often use asparagus as our side vegetable, either just in the oven or on the grill, I also throw it into a stir fry, steamed or even in the chicken pot pie.  Last week I got a bit of inspiration for a slightly fancier side dish for our casual Friday night dinner.  This is a super easy recipe with few ingredients and it takes no time to put together and can be baked while the rest of your meal is being prepared, but it makes for a special treat to enjoy this delicious vegetable.

Asparagus Cheese Tart

Ingredients

1 bunch of asparagus (I usually prefer smaller asparagus, though choosing a slightly larger asparagus may prevent overcooking when baked)

1 sheet puff pastry

1/3 cup shredded cheese (I used cheddar, though you could also use Gruyère or another sharp hard cheese)

Salt and pepper

Preparation

1. Pre-heat oven to 350F degrees .  Line baking sheet with parchment paper.

2. Wash asparagus and trim about 1-2 inches off the stem.

3. Place puff pastry on baking sheet and sprinkle with cheese, leaving about an 1 inch or 2 cm border on the pastry.

4. Place asparagus on top of cheese,  and sprinkle with salt and pepper.

5. Bake 15-20 minutes or until pastry is puffed and golden brown.  Cool on a cooling rack for 5 minutes before slicing and serve warm.
